Standards vary from culture to culture. On Lopez Street, shops prepare and sell chicken to area residents and restaurants. What is prepared today is usually sold today as well. Refrigeration and poultry inspection are not common practices in Mexico. In spite of this, problems with contamination aren't generally an issue.
